FLOURLESS CINNAMON SWIRL PANCAKES

I made these for my boyfriend and I this morning and he loved them (quietly cheering to myself). I think my favorite part is that I don't feel bloated or super full after eating them because they have a lot of protein and are not starchy. These guilt-free pancakes take about 20 minutes in total to whip up. This recipe makes 2 servings!

WHAT I USED:

Pancake Mix

1/2 cup light vanilla yogurt

1 cup rolled oats

3 tablespoons unsweetened almond milk

2 eggs

1 teaspoon of baking powder

1 teaspoon vanilla extract

Cinnamon topping

2 tablespoons MELTED coconut oil

2 tablespoons brown sugar

1 teaspoon cinnamon

WHAT I DID:

Put a large skillet or pan over medium heat and generously coat it with cooking spray. You will want your skill hot and ready for the pancake batter to hit it. Combine Pancake Mix ingredients in your blender in the order I listed them. Blend on high until completely mixed. Let stand for a few minutes to get frothy while you make your cinnamon mixture.

Melt your coconut oil in a small bowl and add the brown sugar and cinnamon and stir. Set next to the stove.

Now it's time to cook your pancakes! Pour batter directly from blender onto skillet to get desired pancake size. I let each side cook for about 3 minutes, or until bubbly and sides start to cook. They will be fairly thin! When you are ready to serve, put some of the cinnamon mixture on top of each pancake and stack (see picture below for a reference). For syrup, I used lite Hungry Jack!
