GUILT FREE CHOCOLATE CHIP COOKIES

It was National Cookie Day this week, so I obviously had to take advantage of this day, but I wanted to find a recipe with less calories and fat. So, I took to Pinterest and starting searching, but I honestly couldn't find anything that wasn't gluten free with all the naughty ingredients or called for items I don't own. I am a pretty experienced banana bread/muffin maker, so I decided to use those skills to create a guilt-free cookie recipe.

My creation was a long shot, but in the end I was pretty impressed. This was MY FIRST GO. So I think it will get perfected over time. Even my boyfriend gobbled them up, and my dog begged (but got none) so there's at least 3 of us that thought they could be good. I think in the future I may test less baking soda, less flour, and more coconut oil.

My secrets to this recipe were substituting honey and applesauce for sugar, and coconut oil for butter. Yep, this recipe has absolutely no butter or white sugar :) AND no all-purpose flour, just 3/4 cup wheat flour and some oats. Enjoy!

WHAT I USED:

3/4 cup unsweetened applesauce

1/4 cup honey

2 1/2 tablespoons brown sugar

1/3 cup coconut oil

1 large egg

1 1/2 teaspoons vanilla extract

1/2 teaspoon salt

3/4 cup old fashioned oats (blended in a blender or food processor, to make an oat flour)

3/4 cup wheat flour

1 teaspoon baking soda

1 1/2 cups dark chocolate chips

WHAT I DID:

1. Preheat oven to 375. Mix applesauce and honey (I used my teal KitchenAid Mixer)

2. Add brown sugar, soft coconut oil, and vanilla and continue mixing

3. Add egg

4. Mix dry ingredients together and add gradually add.

5. Add dark chocolate chips

6. Roll into small balls and flatten a bit. Bake for 8-10 minutes
