BUFFALO CHICKEN TOSTADAS

When you do your grocery shopping, pick up a rotisserie chicken. That's what I used for this recipe. It is a simple recipe that doesn't take a lot of time. My boyfriend and I have been watching Christmas movies so we didn't want to interrupt for too long ;).

As I say in most of my dinner recipes, you can really add/omit/change out ingredients as you please... Although probably not the buffalo sauce.! That's the best part!

Makes 4 tortillas, serves 2-3

WHAT I USED:

Half a rotisserie chicken from Lunds & Byerlys

3/4 cup buffalo sauce (I use Franks Red Hot)

1 cup reduced fat shredded mozzarella

2 cups uncooked spinach

4 corn tortillas

1 tablespoon olive oil

1/3 of an avocado

WHAT I DID:

Preheat the oven to 350 degrees. Shred your rotisserie chicken into a medium bowl. Add buffalo sauce and spinach. Stir until coated in buffalo sauce.

Put your tortillas on a cookie sheet and brush with the olive oil. When the oven is preheated, put your tortillas in the oven for 4 minutes to crisp!

Then, evenly distribute your buffalo chicken mix onto each tortilla and top with generous amounts of mozzarella. Don't forget to prepare your side(s)!

Bake the tostadas for 8 minutes. Let sit for a minute, drizzle some extra buffalo sauce on top and top with some avocado slices and serve. Enjoy!
